Cajun Fish Sticks with Season Fries


  • For the fries:
  • 3 russet potatoes, cut into thin sticks
  • 2 tablespoons grapeseed oil
  • 1 tablespoon paprika
  • 2 teaspoons garlic powder
  • 2 teaspoons onion powder
  • 2 teaspoons salt
  • 1/2 teaspoon pepper
  • 1 tablespoon brown sugar
  • For the fish sticks:
  • 1 1/2 pounds halibut
  • Salt and pepper
  • 3 eggs, beaten
  • 1 1/2 cups panko breadcrumbs
  • 1 cup flour
  • 1/2 cup cornmeal
  • 1 tablespoon Cajun seasoning
  • Canola oil spray
  • For the sauce:
  • 1/2 cup mayonnaise
  • 1/2 cup sour cream
  • 1/2 cup sweet and hot red pepper relish
  • 1 teaspoon paprika


  1. Place the potato sticks in a large bowl and cover with water. Soak for 2 hours.
  2. Preheat heat air fryer to 390 degrees.
  3. Cut fish into strips that are about 2 inches long and 3/4 inch wide, and season with salt and pepper. Add the eggs to a shallow dish, the panko breadcrumbs to a second shallow dish and the flour, cornmeal and Cajun seasoning to a third. Dredge fish sticks in flour and cornmeal, then egg, then panko and place on a baking sheet. Repeat with all of the fish sticks.
  4. Drain the potatoes and pat them dry. Place them on a baking sheet, season with paprika, garlic powder, onion powder, salt, pepper and sugar and toss with oil. Place fish sticks and potatoes in air fryer. Cook the fish for 12 to 15 minutes. Cook the potatoes for 15 minutes.
  5. Mix the sauce ingredients in a small bowl and serve with the fish.
