Ingredients

  • 1 onion, small dice
  • 1 green pepper, small dice
  • 5 cloves garlic, smashed and chopped
  • 2 tablespoons chili powder
  • 2 teaspoons cumin
  • 2 teaspoon smoked paprika
  • 1 pound ground turkey
  • Kosher salt
  • Ground black pepper
  • ½ cup corn kernels
  • 1 16 oz can white beans, drained
  • 1 14oz can crushed tomatoes
  • 2 cups chicken stock
  • Juice of ½ lime
  • 1 ½ cups Shredded cheddar cheese, divided
  • 1 can refrigerated flaky biscuit dough, each biscuit cut into 6ths
  • 2 cups FRITOS®, whole
  • ½ cup FRITOS®, finely crushed
  • Sour Cream
  • Chopped Cilantro
  • Shredded cheese
  • Sliced jalapeno/fresno chili
  • Lime Wedges

Steps

  1. Preheat oven to 325F.
  2. In a 12-inch oven-safe skillet over medium high heat, sweat onions and green pepper in 2 tablespoons oil for 7-10 minutes.
  3. Season with salt and pepper. Add garlic and spices. Cook until fragrant and combined.
  4. Add ground turkey, breaking up meat in the pan.
  5. Add corn, white beans, crushed tomatoes, and stock. Bring to a boil and simmer until thickened, 20 minutes.
  6. Finish with lime juice and season to taste.
  7. Add a 1 cup layer of cheese, whole FRITOS® and cut biscuits.
  8. Cover with another layer of ½ cup cheese and finely crushed FRITOS®.
  9. Bake 40 minutes, until biscuits are golden and cooked through. Garnish as desired.
