Uttapam Pizza

East meets West when you use an Indian pancake for a pizza crust.

Ingredients

Batter

  • 1 1/2 cups white rice flour
  • 1/2 cup black gram flour
  • 1/2 teaspoon salt
  • 2 cups water

Sauce

  • 1/2 cup tomato sauce
  • 1 teaspoon lemon juice
  • 1/4 teaspoon ground red chili powder
  • 1/2 teaspoon cumin powder
  • 1/4 teaspoon garlic powder
  • 1/2 teaspoon salt

Uttapam

  • 3 tablespoons clarified butter (ghee)
  • 1/4 cup red onion, chopped
  • 1/4 cup seeded and chopped tomatoes
  • 1/4 cup coriander, chopped
  • 3/4 cup mozzarella

Steps

Batter

  1. In a large bowl, combine flours and 1/2 teaspoon salt. Whisk to combine.
  2. Add half the water and whisk. Continue whisking, gradually adding water until mixture resembles the thickness of pancake batter and there are no lumps.
  3. Loosely cover bowl with a lid and allow to ferment 9-10 hours or overnight. By morning, the mixture will have increased in volume by 25 percent.

Sauce

  1. Combine all ingredients for the sauce in a small bowl, and set aside.

Uttapam

  1. Heat a medium-sized non-stick frying pan on medium-high heat. Dip a piece of paper towel in ghee, and rub the pan to lightly coat. When the pan is hot, add a ladle (approximately 1/2 cup) of batter to the center of the pan, and gently spread it out until it resembles a thick pancake.
  2. Sprinkle top of batter with red onion, tomatoes, and coriander. Drizzle ghee along the outer edges and top of the Uthappam.
  3. Cook for 2 minutes, until the bottom is golden and crisp. Flip with a spatula, and cook other side for 1 minute.
  4. Flip once more so cooked vegetables are visible on top. Top with 1-2 tablespoons of sauce and a sprinkling of mozzarella cheese. Cover with a lid, and allow cheese to melt. Remove from pan, and enjoy right away.
