Valentine's Fortune Cookies

Ordinary fortune cookies have nothing on these crispy little packages of love.


  • 2 egg whites
  • 1/2 cup superfine sugar
  • Salt, to taste
  • 1/4 cup vegetable oil
  • 1/2 cup flour
  • Splash of vanilla
  • Juice of 1/2 lemon
  • Red food coloring (optional)
  • Filling:
  • 8 ounces mascarpone cheese
  • Zest and juice of 1/2 lemon
  • 1 cup powdered sugar, sifted
  • 3-4 tablespoons dark chocolate, chopped


  1. Preheat the oven to 350°F.
  2. In a mixing bowl, beat together the egg whites, superfine sugar and salt until frothy. Add in the oil, flour, vanilla, lemon juice and red food coloring (if using), and beat until smooth.
  3. Making 2 cookies at a time, place 1 tablespoon of the batter on a sheet pan, and spread out with the back of a spoon until thin (about 4 inches in diameter). Cook until brown, about 4-6 minutes.
  4. In a bowl, combine the filling ingredients.
  5. Remove cookies from the oven. Quickly flip the cookie over, add a teaspoon of filling to the center, fold the cookie in half, and then in half the other way. Rest on the edge of a bowl or mug to help it hold its shape as it hardens. Continue until all the batter and/or filling is gone.
