Veal Cutlet With Cheddar Grits And Poached Egg

This is a delicious recipe to make Veal Cutlet.

Ingredients

  • 2 veal cutlets, thinly pounded
  • 1 egg
  • 2 tablespoons lemon zest
  • 1/3 cup milk
  • 1 cup flour
  • 1 teaspoon baking powder
  • 1 tablespoon green chili powder
  • 1 tablespoon salt

Steps

  1. Season veal cutlets with salt and pepper.
  2. Mix flour, baking powder, green chili powder, and lemon zest in a bowl. Then mix in egg, zest and milk.
  3. Set up dredging station. Add cutlets to wet ingredients. Then dry.
  4. Heat oil in skillet and fry until cutlets are golden brown.

  • 1 cup quick cooking white grits
  • 4 1/2 cups water, plus more as needed
  • 1 1/4 teaspoon kosher salt
  • 4 tablespoons unsalted butter
  • 1 cup grated white cheddar cheese
  • Freshly ground pepper, to taste
  • 1 teaspoon Tabasco

Steps

  1. In a pot over medium heat, bring water to a boil.
  2. Add salt and 2 tablespoons of the butter.
  3. Reduce the heat to low, add grits and whisk until smooth. *If the grits become too thick, add more water.
  4. Remove the pot from the heat. Stir in the remaining 2 tablespoons butter and the cheese.

  1. Bring water and vinegar to a boil.
  2. Crack egg into a small bowl.
  3. With a whisk, create a vortex in the boiling water. Then gently drop the egg into the vortex.
  4. Using a slotted spoon swirl the egg around until poached.
