Veggie Hash Brown Sandwich

With "bread" made from shredded sweet potatoes, zucchini and more, this egg and avocado breakfast sammie is a healthy morning pick-me-up.


  • Hash browns:
  • 1 russet potato, peeled
  • 1 sweet potato, peeled
  • 1 zucchini
  • 1 yellow squash
  • 1 white onion
  • 3 cloves garlic, minced
  • Pinch salt
  • Pinch black pepper
  • 2 1/2 tablespoons potato starch
  • Olive oil spray
  • Sandwich:
  • 1 avocado, sliced
  • 1/4 cup arugula
  • 3 tablespoons sun-dried tomatoes in oil
  • Sunny side egg (optional)


  1. Use a grater to shred potatoes, zucchini, squash and onion. Ring out excess liquid using a dish towel. Toss in bowl with garlic, salt, pepper and potato starch.
  2. Coat a waffle iron with olive oil. Spoon mixture into waffle iron. Make sure it is thick and compressed together. Cook 25 minutes on medium-high heat. Let cool, then add sandwich fillings.
