Veggie Meatballs 3 Ways
No matter how you roll it, with lentil, spinach and chickpea meatballs, you now have veggie meatballs for nearly any occasion.
Ingredients
- Oil, for frying
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 carrot, grated
- 2 cups cooked lentils
- 1 1/2 cups breadcrumbs
- 1 egg
- Salt and pepper, to taste
- 1/4 bunch of parsley
- 1 cup barbecue sauce
Steps
- In a saute pan over medium heat, add the oil and saute the onion, garlic and carrot. Set aside.
- In a food processor, add lentils, breadcrumbs, egg, salt, pepper and parsley along with the sauteed vegetables. Grind until it becomes a dough.
- Create little balls and place them on a greased baking sheet.
- Bake in the oven at 390 degrees for 10 minutes.
- In a large skillet, add the barbecue sauce and heat through. Combine with the meatballs and serve.

- 3/4 cup ricotta
- 1/2 cup breadcrumbs
- 1/2 cup grated Parmesan cheese
- Salt and pepper, to taste
- 1 cup tomato sauce
- 1/2 cup coconut milk
Steps
- In a saute pan over medium heat, add the oil and saute the onion, garlic and spinach until the spinach is dry. Set aside.
- In a food processor, add ricotta, salt and pepper along with the sauteed vegetables. Blend until it becomes a dough. Add the breadcrumbs and blend until combined.
- Create little balls, coat them in the grated Parmesan and place them on a greased baking sheet.
- Bake in the oven at 390 degrees for 10 minutes.
- In a large skillet, combine the tomato sauce and coconut milk and heat through. Combine with the meatballs and serve.

- 1/2 cup breadcrumbs
- 1/4 cup fresh parsley
- Salt and pepper, to taste
- 2 cups pasta sauce
Steps
- In a saute pan over medium heat, add the oil and saute the onion and garlic. Set aside.
- In a food processor, add the chickpeas, egg, tomato paste, breadcrumbs, parsley, salt and pepper along with the sauteed onion and garlic. Blend until it forms a dough.
- Create little balls and place them on a greased baking sheet.
- Bake in the oven at 390 degrees for 15 minutes.
- In a large skillet, heat the pasta sauce. Combine with the meatballs and serve.
