Veggie Pizza with Cauliflower Crust

How to make Veggie Pizza with Cauliflower Crust.


  • Nonstick cooking oil
  • 1 medium-sized head of cauliflower
  • 1/4 teaspoon kosher salt
  • 1/2 teaspoon dried basil
  • 1/2 teaspoon dried oregano
  • 1/2 teaspoon garlic powder
  • Crushed red pepper, optional
  • 3 tablespoons almond meal
  • 1 tablespoon olive oil
  • 1 egg
  • Toppings:
  • Caramelized onion
  • Mushroom
  • Arugula
  • Avocado
  • Tomato sauce
  • Red pepper flakes, to garnish


  1. Place a pizza stone or baking sheet in the oven. Preheat oven to 450 degrees.
  2. On a cutting board, place a large piece of parchment paper and spray with nonstick cooking oil or olive oil.
  3. Wash and thoroughly dry the cauliflower. Cut off the florets; discard the stem. Pulse florets in the food processor for about 30 seconds, until you get powdery, snow-like cauliflower. (Should be roughly 3 cups of cauliflower.)
  4. Steam cauliflower for 10 minutes. Dump cooked cauliflower onto a clean tea towel and allow to cool for a bit before handling. Wrap cauliflower in the tea towel and wring out all the water. (You want to get out as much water as possible so your crust is nice and chewy.)
  5. Place cauliflower in a bowl. Add all the spices, almond meal, and olive oil. Stir the mixture to incorporate all the ingredients. Add the egg and mix with your hands.
  6. Once mixed together, use your hands to form the dough into a crust on the oiled parchment paper. Pat down so the dough is a nice circle, not too thick or thin.
  7. Carefully slide the parchment paper onto your hot pizza stone or baking sheet. Bake crust for about 12 minutes, or until it starts to turn golden brown and the edges crisp up. Remove from oven.
  8. Add your toppings­ and enjoy!
