Veggie Tots 4 Ways

Ordinary tater tots have nothing on these guilt-free, savory snacks.

Ingredients

  • 1/4 cup onion, diced
  • 1/3 cup breadcrumbs
  • 1/3 cup Parmesan cheese
  • 3 tablespoons parsley, chopped
  • 1 large egg
  • Salt and pepper
  • 2-3 cups broccoli florets, cooked

Steps

  1. Preheat oven to 400°F.
  2. Microwave broccoli for 3 minutes, drain and pulse in a food processor.
  3. In a medium bowl, combine all ingredients.
  4. Shape into tots; place on parchment-lined baking sheet. Bake for 20 minutes; turn halfway. Serve with your favorite dipping sauce.
