Veggie Tots 4 Ways
Ordinary tater tots have nothing on these guilt-free, savory snacks.
Ingredients
- 1/4 cup onion, diced
- 1/3 cup breadcrumbs
- 1/3 cup Parmesan cheese
- 3 tablespoons parsley, chopped
- 1 large egg
- Salt and pepper
- 2-3 cups broccoli florets, cooked
Steps
- Preheat oven to 400°F.
- Microwave broccoli for 3 minutes, drain and pulse in a food processor.
- In a medium bowl, combine all ingredients.
- Shape into tots; place on parchment-lined baking sheet. Bake for 20 minutes; turn halfway. Serve with your favorite dipping sauce.
