Fans of fried squash blossoms or veggie fritters will love these crispy, crunchy fried onion treats.
2 onions, thinly sliced
1 cup chickpea flour
1/4 teaspoon baking soda
3 green chilies, finely chopped
1/4 cup chopped coriander
1/2 teaspoon salt
1/2 cup water, plus more if needed
Oil for deep-frying
Combine sliced onions, chickpea flour, baking soda, green chilies, coriander and salt in a bowl. Stir to coat.
Add water slowly and stir until onion mixture holds together, but is not too wet.
Heat oil in a deep-frying pan on medium-high heat until it reaches 375 degrees.
Gently drop spoonfuls of onion batter into oil. Fry, flipping occasionally, until all sides are golden brown and crunchy. Enjoy!
