Sweet Waffle Nachos


  • Buttermilk cornmeal waffles:
  • 1 cup all-purpose flour
  • 1 cup cornmeal
  • 1/4 cup cornstarch
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1 teaspoon salt
  • 1 1/2 cups buttermilk
  • 2 large eggs, separated
  • 1 tablespoon sugar
  • 1 teaspoon vanilla extract
  • Whipped bourbon butter:
  • 1 stick salted butter, at room temperature
  • 1 teaspoon bourbon
  • 1 teaspoon packed brown sugar
  • Toppings:
  • 1/2 cup maple syrup
  • 1/4 cup fresh strawberries, sliced
  • 1/4 cup fresh blueberries
  • 1/4 cup fresh raspberries
  • 1/4 cup fresh blackberries
  • 1/2 cup pecans, chopped
  • 1 (12 ounces) jar strawberry preserves
  • 1 (12 ounces) jar blueberry preserves


  1. Preheat waffle iron, and line a baking sheet with parchment paper.
  2. Make the waffles.In a large bowl, whisk together the flour, cornmeal, cornstarch, baking powder, baking soda and salt.
  3. In a small bowl, add buttermilk and egg yolks and whisk to combine. In another separate smaller bowl, beat egg whites, vanilla and sugar until whites form stiff peaks. Add the buttermilk mixture into the dry ingredients and stir to fully combine, then gently fold in whites until just combined.
  4. Spray waffle iron with nonstick spray and scoop in about 9 tablespoons of batter. Cook until golden brown and cooked through, then repeat with remaining batter. Cut each waffle into quarters.
  5. Whisk together the bourbon butter ingredients in a medium bowl.
  6. Layer half the waffle quarters on the prepared baking sheet. Dollop each quarter with bourbon butter. Drizzle with maple syrup. Add the remaining waffle quarters and dollop with butter. Add berries, a sprinkling of pecans, spoonfuls of jam, and another drizzle of maple syrup to serve.
