Savory Remoulade Waffles with Crispy Tempura Shrimp

Chicken and waffles are old news — fried shrimp and Creole-seasoned waffles are where it's at.

Ingredients

  • For the batter
  • 2 cups all-purpose flour
  • 2 teaspoons baking powder
  • 2 teaspoons baking soda
  • 1 teaspoon cayenne
  • 2 teaspoons Creole seasoning
  • Horseradish
  • 1 tablespoon chopped pickles
  • 1 teaspoon capers, drained and chopped
  • 1 tablespoon Creole mustard
  • 2 large eggs
  • 2 cups buttermilk
  • 4-5 tablespoons unsalted butter, melted
  • 3/4 cup cheddar cheese, grated fine
  • 2 tablespoons chopped scallion
  • 1 tablespoon honey
  • Salt and cracked black pepper, to taste
  • For the shrimp
  • 3/4 pounds shrimp, deveined, peeled, tails on
  • Cornstarch for dusting
  • 1 cup flour
  • 1 egg
  • 3/4 cup bubbly water
  • Oil for frying

Steps

  1. Whisk together flour, baking powder, baking soda, cayenne and Creole seasoning. In another bowl, whisk together horseradish, pickles, capers, mustard, eggs, buttermilk and butter until homogenous. Stir in cheese, scallions and honey.
  2. Preheat a waffle iron, spray with cooking spray and pour in about 1/2 cup of batter (depending on iron size). Cook 5-6 minutes. Repeat with remaining batter.
  3. Dust shrimp with cornstarch and prepare batter. Whisk together flour, egg and bubbly water to desired consistency. Dip shrimp in and fry in 350-degree oil for about 3 minutes. Drain on paper towels.
