Watermelon Cake Pops

Bite into these cake pops to discover a realistic watermelon center!

Ingredients

  • Cake:
  • 1/2 cup unsalted butter, room temperature
  • 1 cup sugar
  • 1/4 teaspoon watermelon extract
  • 3 eggs
  • 1 1/2 cups all-purpose flour
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 cup + 2 tablespoons sour cream
  • Pink food coloring
  • Approx. 1/4 cup vanilla frosting
  • 1/4 cup mini chocolate chips
  • 1/2 cup white candy melts, melted
  • 1/2 cup light green candy melts, melted
  • 1/4 cup dark green candy melts, melted
  • Lollipop sticks

Steps

  1. Bake the cake:
  2. Beat the butter and sugar with an electric mixer until pale and fluffy. Add the watermelon extract and eggs and beat until well combined. In a separate bowl, combine the flour, baking soda and salt. Add this to the mixture in 2 additions, alternating with the sour cream. Dye the batter bright pink with the food coloring. Pour into a lined muffin pan and bake at 350F for 20 minutes. Cool completely.
  3. Assembly:
  4. Crumble the cupcakes and measure out 1 cup of cupcake crumbs. Add the vanilla frosting and mix until the mixture is sticky and is easily shaped into balls. Add the mini chocolate chips and mix until well incorporated.
  5. Divide the mixture into 10 portions and shape them into balls. Place them on a plate lined with plastic wrap and place in the freezer for 10 minutes, or until firm. Reshape the cake into balls.
  6. Dip the ends of the lollipop sticks into the white candy melts, then gently twist into the tops of all the cake pops. Return the plate to the freezer until the candy melts have set.
  7. Dunk each cake pop into the remaining white candy melts, allowing any excess to drip off. Return to the plate and place in the freezer until set.
  8. Dunk the cake pops in the light green candy melts, then return to the freezer until set.
  9. Place the dark green candy melts into a piping bag fitted with a small, round tip. Drizzle it onto the cake pops to look like watermelon stripes. Return to the freezer to set.
  10. Bite into the cake pops to reveal a realistic watermelon center!
