Make summer last forever with these colorful watermelon tarts!
Green tea tart dough:
3 ½ ounces unsalted butter, room temperature
⅓ cup sugar
2 egg yolks
1 ¾ cups cake flour
1 tablespoon matcha green tea powder
3 watermelon ice cream bars
A little less than ¼ cup of water
½ teaspoon agar-agar
Bring water and agar-agar to a boil in a pot to make the jelly liquid.
Next, make the green tea tart dough.
Add the sugar to the room temperature butter and mix well.
Add the egg yolks and continue to mix, then add the sifted cake flour and mix gently with a rubber spatula.
When it comes together in a ball, wrap with plastic wrap and chill 30 minutes in the refrigerator.
Spread thinly in a tart pan and bake at 350 degrees for 30 minutes.
Then, remove the sticks from the watermelon ice cream bars, separate into the red and green parts, and place them into bowls to melt.
Mix the jelly liquid into each.
Pour each into the green tea tart shell, and chill until set.
Cut into pieces for the desired size.
