Watermelon Sangria Slushie

This spiked watermelon slushie is summer refreshment at its finest.

  • 4 cups chopped, seedless watermelon (3 cups pureed)
  • 3/4 cup sugar, divided
  • Pinch of salt to taste
  • 1/2 cup favorite red wine
  • 1/4 cup orange juice
  • 1/4 cup pure cane sugar
  • 2 tablespoons Cointreau
  • Mint leaves, for garnish

  1. Add the chopped watermelon to a blender and puree until smooth. Pour into a saucepan, and bring to a boil along with 1/2 cup sugar and a pinch of salt. Cook until the watermelon is reduced by a third, about 2 cups. Allow it to cool slightly, then pour into a freezer container.
  2. In the same saucepan, add the red wine, orange juice, sugar and Cointreau. Cook for 5 minutes or until the sugar is dissolved. Pour into the container with the watermelon juice, and stir to combine. Freeze overnight until it's slush. Scoop into cups and serve.
