Whipped Ricotta Balsamic Fruit Salad

The perfect pairing of ripe cherries, peaches and plums on a cloud of sweet whipped ricotta.


  • 1 container of ricotta
  • 1 tablespoon lemon zest
  • 1 tablespoon grated ginger
  • 1 tablespoon maple syrup
  • 2 cups Cherries, Pitted and halved
  • 1 Peach, cubed
  • 2 Plums, cubed
  • 1 Nectarine, cubed
  • Fresh Basil
  • 1/3 cup toasted walnuts
  • Balsamic Glaze


  1. To make the whipped ricotta, begin by adding the entire container of ricotta to a food processor with the maple syrup, ginger and lemon zest. Blend for 2-3 minutes until smooth and silky.
  2. Scoop out the ricotta onto a nice wooden cutting board. Make an oval shape with a well in the center. Dump your fruit in the center and sprinkle over the walnuts. Finish by carefully drizzling over the balsamic glaze and a handful of chopped fresh basil.
