White Chocolate Raspberry Tart

Cute mini rasberry tarts with an oreo crust, white choc ganache filling and fresh raspberries on top.

Ingredients

White Chocolate Raspberry Tart

  • *Four 10 centimeters mini tart tins with removable bottoms
  • 180 grams Oreos
  • 75 grams unsalted butter, melted
  • 300 grams fresh raspberries

White Chocolate Filling

  • 180 grams white cooking chocolate
  • 90 milliliters heavy cream

Steps

White Chocolate Raspberry Tart

  1. Add Oreo cookies to a food processor and process until you reach a fine crumb.
  2. Add the butter and blitz until you have a damp, sandy mixture.
  3. Add about 2 tablespoons to each tart tin and spread evenly across the sides of the tins pressing the Oreo crumb firmly with your fingers or the back of a spoon.
  4. Then add another tablespoon of mixture and press firmly in the bottom.
  5. Refrigerate for 30 min.
  6. Fill each tart tin with white chocolate.
  7. Carefully place fresh raspberries on top and drizzle with white chocolate.

White Chocolate Filling

  1. Add white cooking chocolate and cream into a microwave safe bowl and microwave for 20 seconds at a time mixing each time until mixture is smooth.
