Zucchini Bacon Pecorino Bake

Bacon, zucchini and pecorino come together for one hell of a dish.

Ingredients

  • 8 strips bacon
  • 6 medium zucchinis, sliced longways
  • Pecorino Romano cheese
  • 1 bunch mint
  • Breadcrumbs
  • Olive oil

Steps

  1. Preheat oven to 400 degrees F.
  2. Partially cook the bacon in a hot pan to render out some of the fat.
  3. Line a casserole dish with sliced zucchini, then bacon, then grate pecorino over to cover bacon. Toss torn mint leaves over pecorino, and repeat the layering process. The top layer should be zucchini. Drizzle with olive oil, grate pecorino over top, and sprinkle breadcrumbs evenly over top.
  4. Bake for 20 minutes.
  5. Slice with a sharp knife, and garnish with mint sprigs.
