Come experience how we celebrate the holidays in the Philippines. These dishes are based on the traditional food served after the night mass as well as something that would be served on the eve of christmas. The rice-based foods were traditionally served to fill the stomachs of the farmers, since rice is a cheap and primary staple. The pastries were full of carbohydrates needed by colonial Filipinos for the back-breaking work they were subjected to in the rice paddies and sugar mills.

pancit molo
Small Plate
is an adaptation of wonton soup, is a specialty of the town of Molo in Iloilo a well-know district in the province. Unlike other pancit, pancit molo is not dry but soupy and it does not make use of long, thin noodles but instead wonton wrappers made from rice flour.
Arroz Valenciana
Filipino adaptation of the famous Valencian dish made with rice, vegetables, saffron, chicken and seafood, very similar to paella.
Lechon na inasal na Pugo
quail roasted in lemongrass, ginger, vinegar and garlic
bibingka & biko
bibingka a type of rice cake from the Philippines usually eaten during the Christmas season. Made with rice flour and coconut milk and young coconut. this is my local island's version. biko is a steamed rice cake served with coconut caramel.
