I was born and raised in Oaxaca, Mexico. When I turned 18 I left on a mission to travel and learn as much about desserts as possible. That mission started at the Culinary Institute of America, after I graduated I traveled, apprenticing in places like Celler de Can Roca and Per Se. Returning to the US I missed the authentic flavors of Oaxaca and I started to try and recreate the aromas I grew up on. Today I’m just excited to share all the flavors and techniques with anyone curious enough to taste the authentic flavors of Oaxaca.
